- most of them answer ready meat. as its tastes superb, its fresh , its reliable and gives pleasure of cooking etc, etc
so where do u buy ur meat from fish from mutton from? The butcher's shop?
- the place stinks
- cant stand the unhygienic place
- am scared of butchers knife
- no my husband, my father, my brother only go and buy

ReplyDeleteShopping of Fish and eggs are done by woman when it is available at door step or closed market. Normally Ready Meat and chicken shopping is done by man. Now a day’s most of couple go for packed food as it is any time easily available in most of the shops.

ReplyDeleteOnce i went to shop fish with my dad near the station, lot of bargain, besides human beings there were lots of flies, cats & dogs, from that day onwards i dont go to shop these stuff & i told dad not to buy from roadside... I love fish & chicken very much...& also preparing them....

Historically, every Sunday I have seen people waiting outside the local Butcher shop to buy meat; majority of them being male population. But in the recent past with the packaged non-veg food available in super market stores things have changed. The stores offer a variety of sea-food and meat, price is reasonable if not economical and most importantly there is more hygiene. The stores have specific section where they sell only Halal food. Because of religious reasons a major chunk of non-veggies only prefer to have halal food.

2)The frozen food and packaged food is preferred only for lack of time, apprehension to go to a butcher and convenience
3) Super markets are also trying to get ready meat / fish / mutton etc. but in Mumbai there are few chains as of now.
Guess there is potential of a modern butcher shop which can give pleasure of negotiation with macchi wali bai and comforts of ac!!!!!!!!!!!!!!!

The idea sounds fantastic. But I have seen fixed rate charts hanging in butcher shops; negotiation happens only in roadside or market fish shopping. And increasing cost by extra elements like AC, can we match up with market competitive rate?

ReplyDeleteIn the earlier days I shopped for fish. I would go to the fish market in Parle and ask a lady who I had tied up with to get me my share of fish cut and cleant - ready to wash and cook.
I have never shopped for Chicken and mutton except in packets from Al-kabeer types.
My take on this...scope for a business like this exists as long as you are ready to compete with local fish vendors who give quality in terms of freshness and price that is bargainable.
Few observations -
the lower middle class women do the purchasing of fish/chicken/mutton in most cases.
women bargain, fight, look for quality, quantity etc - look for more than VFM. they are pretty good at it, the better deals u can get the better housemaker u r...cos the richness in food is measured by the frequency of meat you eat.
the upper middle class which is the world pretty much germinated by the corporate segment loves to buy easy to use, clean, quality meat, fish in a cleaner environment and for that the little premium is what they would be more than willing to pay.
If the VFM is not coming in...they would ask the maids, domestic, helps to buy the meat for them and that would mean it goes a level below to point one.
where a man in the house buys the meat(refer to as fish/mutton/chicken/beef/pork) he will not bargain but will look for quality product and consistent quality.
targeting the upper middle class man/woman is a good idea and hence emphasis on quality, freshness, and consistency will make this model sustainable.
Let me start by segregating non-veg items into three categories:
ReplyDelete1. Poultry: This is primarily chicken in India. Turkey is available on very very rare occassions. My mother used to prefer the packed "broiler" (ala Godrej Real) chicken. She was not much of the live chicken purchaser. And the purchase was done by anyone in the family. Now I stay in a village in outskirts of Mumbai with my family. My wife prefers the live chicken shops. She does not believe the packed chicken is "fresh". In fact, the chicken shop delivers the chopped chicken to our house whenever my wife orders over the phone.
One thing to consider is that chicken is often purchased by weight (or size).
2. Red meat (buffalo or goat or pork): I have not seen people buying packed meat. This could primarily be due to the notion of it not being fresh. Here the purchase is often through butcher shops. Again, there are separate shops for goat, pork and buffalo. The mutton (goat) shops are often adjacent to fish markets but the buffalo (beef) shops are standalone and often not very prominent. The beef shops are also staffed (and probably owned) by muslims. The fact that it is not prominent could be due to the notion that they probably sell "cow" meat. Though, slaughter of cows are not legal in India there is still some sceptism on whether the meat in the beef shops are cow or not. And a skinned buffalo does not look too different from a cow. The purchase of red meat is often done by the male members. Pork shops are dominantly found in catholic dominated areas, especially east indian.
3: Sea food (primarily fish): This is the only category where negotiation goes on in a big way. The shoppers are dominantly women. Men folk often do not bargain as aggressively as the women (and probably are the most profitable customers to the vendors :). In this category too packed items are not preferred. The fish markets are often located in the heart of the market area and are often purchased as part of regular market shopping. In some residential areas, the fish seller often visits door to door to sell fish and sometimes are preferred over a trip to the market.
There could be a fourth category: Processed Food: for example, salami, nugget, ham, etc. The concept of freshness is very important here. The packed contents have a expiry date on it. But the packed date is more important. People often buy only if the packed date is not more than one week old, even though the expiry date is one month later.
The fish, beef, pork and mutton shops are exclusive shops. Chicken shops do sell frozen products, but I have not seen any shop that is known for both. They either are known for live chicken or for frozen products.
